Saffron risotto with peas and burrata; chicken schnitzel with forest mushroom and truffle sauce; bavette skewer with harissa, tahini and sumac onion; braised oxtail orzo with confit lemon and chermoula; and spiced squid en papillote with chickpeas, feta and Taggiasche olives.
